Valentine's Day Entertaining with Lisa Stoner

I always love a good collaboration. When my dear friend and talented event planner Lisa Stoner and I join forces, we always ends up with fabulous content! Between her amazing design ideas and our mutual love for creating beautiful vignettes (oh, and rosé), the options are limitless. This Valentine’s Day, Lisa delivered five stunning scenarios styled to showcase the best of Valentine’s Day morning, noon, and night. Enjoy!

“Tea and Muffins For Two”

This lovely breakfast setup makes for such a delightful start to our V-Day! There’s nothing better than enjoying some special quiet time reflecting on the things that we love in life and are grateful for. And Valentine’s Day is a great holiday to do this! Enjoying the mild February weather over scrumptious homemade blueberry muffins and hot tea, yes please! This day is all about giving what would be considered ordinary it’s own special presentation, even if it’s just for looks! Lisa keeps it simple, showing all it really takes for a table to shine are just a few small (and thoughtful) touches. Adding in a mason jar of fresh herbs (even if just for aroma), red cupcake plates for the muffins (so cute!), and a soft boiled egg displayed so regally in it’s own silver cup? And who can forget our furry friends? Enter, Lisa’s dapper pup Mr. Fred Rogers featured below! You just may find him during cocktail hour too. Wink!

Amazing Blueberry Muffins - Vegan

Recipe by Two Raspberries

Dry Ingredients

1 1/2 cup all purpose unbleached flour

2 tsp baking powder

1/2 tsp sea salt

1/2 cup vegan cane sugar + more for topping

Wet Ingredients

1/2 cup unsweetened vanilla almond milk

1/2 tsp apple cider vinegar

1/3 cup unsweetened natural applesauce

1/4 cup vegan butter melted (I used earth balance in the red tub)

1 tsp vanilla

3/4 cup blueberries (I used fresh but frozen probably works too)

INSTRUCTIONS

Pre heat your oven at 375 and spray your muffin pan with non stick spray

In a small bowl mix your almond milk and apple cider vinegar and set aside

In a medium sized mixing bowl combine all your dry ingredients

Melt butter in a small bowl, and add your other wet ingredients including the almond milk mixture and stir well

Add wet and dry ingredients together be careful not to over mix, stir the mixture, it should be lumpy not smooth

Stir in blueberries keeping a couple aside for topping

Pour mixture into the muffin pan filling a little more than 3/4 full

Top each muffin with blueberries and sugar

Place in oven and bake for 23 minutes

Let cool for 15 minutes before eating

Makes 7 muffins


A “Hearty” Vegan Valentine’s Lunch

Showing love to our health is just another way to honor ourselves this Valentine’s Day. I have to say, vegan or not, this sandwich by Spoonful of Kindness is so tasty! It’s all about flavor and piling on the veggies. Lisa lets this hearty sandwich recipe stand out as the sole player styling it on a simple, rustic cutting board and a gingham picnic-style tablecloth. She gives this gourmet hand-held a “V-Day twist” wrapping it in beautiful hand-drawn paper dawning the word “Love”. And love it you will! Serve with your favorite side and a refreshing sparkling water (we chose Izzy raspberry sparkling water of course for color!) and you’re good to go!

Lisa’s Notes:

The vegan veggie sandwich is ridiculously easy, and I load on whatever crunchy veggies I have in hand, it’s a good “base” Is lettuce, tomato and cucumber. I did store bought hummus, but made the pesto (added more garlic than originally called for because... duh!)

Basil Pesto

1 cup fresh basil

1 clove garlic

1 tablespoon lemon juice

2 tablespoons walnuts, chopped

1/8 teaspoon salt

1 tablespoon olive oil

Instructions

To Make Basil Pesto

To a food processor or small blender, add the basil, garlic, lemon juice, walnuts and salt, and blend on high until a loose paste forms.


Add olive oil a little at a time and scrape down sides as needed, until the desired consistency is reached.

Assemble the Sandwich

Spread hummus onto one slice of the bread, and basil pesto onto the other.

Top with as much fresh veggies as you want, and cover with the other slice. Repeat with the other two slices of bread.

What Valentine’s Day would be complete without a toast of Rosè or an elderflower cocktail? Add in stunning pink floral, gold accents, and a dainty coup to toast with and you’ve got yourself the ultimate V-Day celebration. Lisa takes it an extra step with her tablescape adding more dreamy elements with an abundance of gorgeous handmade paper rolls by Ashton Ink and a bouquet of fresh peonies. Cheers ladies!

#Bar Cart Goals

We could have stared at this setup all. day. Bar cart decor has become quite the trend these days and we can see why! Lisa’s stunning bar cart styling is the perfect display idea for all of your V-Day libations. She kept the pink and gold theme (I mean why change it?) Her continuation of gold, pinks, glass coups, and of course Mr. Fred Rogers epitomizes a proper Valentine’s Day bar cart. And we couldn’t forget our beautiful bottle of St. Germain Elderflower, so pretty!

Elderflower Rosè Sangria

Ingredients

1 cup strawberries preferably wild

½ cup blueberries

1 bottle rosé wine 750 mL, such as Cave Spring Dry Rosé

½ cup St. Germain liqueur

2 cups carbonated or sparkling water

Strawberries blueberries and dehydrated blood orange slices, for garnishing

Instructions

1. Trim and chop strawberries. Pour wine into a large pitcher or punch bowl. Add fruit. Refrigerate and allow flavours to infuse overnight.

2. Just before serving, stir in liqueur and carbonated water. Ladle sangria, including fruit, into ice-filled rocks glasses. Garnish with fresh strawberries, blueberries and a slice of dehydrated blood orange, if you like.
